Gehalbirte ayer

Gehalbirte ayer eggs arranged on Moroccan plate topped with coriander leaves.

These spiced stuffed eggs would probably have been served alongside other more substantial dishes on the medieval table. Although sugar and spices are included, they are savoury enough to be served as an interesting appetiser. The reaction to them has initially been unsure but I have rarely found any left on the serving dish!

Equipment

  • Mixing bowl
  • Baking sheet
  • Baking paper

Preparation method

  • Preheat the oven to 180C/350F/gas 4.
  • Line the baking sheet with baking paper.
  • Slice the eggs in half lengthwise, scoop out the yolks and place in the mixing bowl.  
  • Arrange the egg white halves on the lined baking sheet.
  • Add the parsley, spices and sugar to the cooked egg yolk in the mixing bowl and stir to combine all the ingredients.
  • Add the raw egg and stir in to moisten the mixture.
  • Place a spoonful of egg yolk mixture into the cavaties of each cooked egg white and spread over to cover the edges.  
  • Place a small knob of butter on each egg half and place in the oven for 10-15 minutes or until the egg whites have browned slightly and the filling is cooked.
  • Arrange on a serving plate and allow to cool to room temperature. Top with a coriander leaf or two before serving as an hors d'oeuvre.

  • 6 large eggs, hard boiled and shells removed
  • Large bunch parsley, finely chopped
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp grated nutmeg
  • 1 tbsp caster sugar
  • 1 medium egg

To finish

  • Coriander leaves
