Deptford pudding

The combination of breadcrumbs soaked in a custard and then baked appears in many recipes throughout Britain. Why this recipe is attributed to Deptford, which was Henry VIII’s first naval dockyard, is not clear. There is, however, a sailors’ song about ‘Pretty Polly of Deptford’ which refers to her talent for sewing and making puddings and pies. Perhaps this was one of the puddings she excelled in making.

Equipment

  • Weighing scales

  • Oven proof rectangular dish
  • Food processor
  • Electric hand whisk
  • 2 large mixing bowls
  • Roasting tin

Preparation method

  • Preheat the oven to 180C/350F/gas 4.
  • Grease the oven dish with butter.
  • Place the egg yolks and sugar in a large mixing bowl and beat with the electric hand whisk until thick and pale in colour.
  • Add the milk and cream and whisk in thoroughly.
  • Fold in the breadcrumbs, the zests and the orange and lemon juice.
  • In the other mixing bowl, whisk the egg whites to stiff peaks and fold them into the bread and milk mixture.
  • Pour the mixture into the prepared dish and place in a roasting tin.
  • Fill the roasting tin with hot water from the kettle so that it comes halfway up the sides of the oven dish.
  • Place in the oven and bake for about 40 minutes, or until the custard has risen and the top is golden.
  • Serve dusted with icing sugar.

Tip: To make breadcrumbs, the best way is to place chunks of bread into a blender and whizz. You may need to turn the blender off occasionally and push the bread pieces down with a wooden spoon.

  • 2 large eggs, separated
  • 60 g soft brown sugar
  • 180 ml milk
  • 180 ml single cream
  • Grated zest and juice of an unwaxed lemon
  • Grated zest and juice of an orange
  • Icing sugar for dusting
