Ginger biscuits

Like gingerbread, ginger biscuits became particularly popular during the eighteenth century due to ginger’s supposed health benefits.

Equipment

  • Baking sheet
  • Weighing scales
  • Small saucepan
  • Sieve
  • Mixing bowl

Preparation method

  • Preheat the oven to 170C/325F/gas 3.
  • Grease the baking sheet with butter.
  • Place the golden syrup, butter and sugar in the small saucepan and heat until the butter has melted and the sugar dissolved.
  • Sift the flour and ground ginger into the mixing bowl and pour in the syrup mixture along with the crystallised ginger and stir thoroughly.
  • Place tablespoonsful of the biscuit mixture onto the baking sheet keeping as much space around them as possible to allow for the mixture spreading as it bakes.
  • Place in the oven and bake for 10 minutes.
  • Remove from the oven and allow to cool on the baking sheet before transferring them to a cooling rack.
