Like gingerbread, ginger biscuits became particularly popular during the eighteenth century due to ginger’s supposed health benefits.

Preparation method
Preheat the oven to 170C/325F/gas 3.
Grease the baking sheet with butter.
Place the golden syrup, butter and sugar in the small saucepan and heat until the butter has melted and the sugar dissolved.
Sift the flour and ground ginger into the mixing bowl and pour in the syrup mixture along with the crystallised ginger and stir thoroughly.
Place tablespoonsful of the biscuit mixture onto the baking sheet keeping as much space around them as possible to allow for the mixture spreading as it bakes.
Place in the oven and bake for 10 minutes.
Remove from the oven and allow to cool on the baking sheet before transferring them to a cooling rack.
