Buttermere biscuits

Buttermere biscuits’ name refers to the lake in Cumbria where rich pastureland produces a particularly rich butter.  They are deliciously crisp shortbread biscuits with a lemony zing!
 

Equipment

  • Weighing scales
  • Baking sheet
  • Large mixing bowl
  • Cling film
  • Rolling pin
  • 7cm unfitted pastry cutter
  • Cooling rack

Preparation method

  • Preheat oven to 180C/350F/gas 4.
  • Grease the baking sheet with butter.
  • Sift the flour, salt, baking powder and cinnamon into the mixing bowl.
  • Rub the butter into the flour until it resembles fine breadcrumbs.
  • Add the sugar, currants, lemon rind and cinnamon and stir well.
  • Bind with the beaten egg and knead the mixture lightly to a smooth dough.
  • Wrap in clingfilm and place in the fridge for 30 minutes.
  • On a lightly floured work surface, roll out to 5mm thick and cut out biscuits with the pastry cutter.
  • Place on the baking sheet and bake in the preheated oven for 15-20 minutes until very slightly golden.
  • Transfer to the cooling rack and cool to room temperature.

  • 250 g plain flour
  • Pinch of salt
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 125 g unsalted butter, chilled and cut into small cubes
  • 125 g caster sugar
  • 50 g currants
  • Grated zest of 1 lemon
  • 1 large egg, beaten
