Oatcakes

Before the introduction of ovens, bread was cooked on bakestones or griddles over an open fire.  Oats were widely cultivated during the Iron Age. They were particularly grown in northern and western parts of the British Isles where wheat was harder to grow.  Oatcakes are still commonly eaten, particularly in Scotland.

Equipment

  • Weighing scales
  • Measuring jug
  • Large mixing bowl or food processor
  • Rolling pin
  • Griddle
  • 7cm unfitted pastry cutter

Preparation method

  • Place the flour, oatmeal and salt in the large bowl or food processor.
  • Cut the lard into small cubes, add to the bowl and rub into the mixture with your fingers, or process if using a food processor.
  • Once the lard has mixed with the flour add enough water to make a stiff but maleable dough.
  • Place on a lightly floured work surface and shape the dough into a ball.
  • Roll out to 5mm thick.
  • Cut out rounds with the pastry cutter.
  • Heat the griddle to very hot and place the oatcakes on it, a few at a time.
  • Cook the oatcakes until they look very pale and are dry (a few minutes on each side).
  • Transfer to a cooling rack. Serve, once completely cool, or place in an airtight container for later consumption.

This recipe is suitable for vegetarians and vegans if the lard is replaced with vegetable shortening
