Eton Mess

Eton mess in dessert glass on silver dish. Glass bowl of Eton mess in background. Jug of roses in back ground. For Eton mess recipe.

Legend has it that Eton Mess was the result of an accident when a strawberry, meringue and cream dessert was dropped on the floor during an Eton v Harrow cricket match towards the end of the nineteenth century.  Rather than discarding the resulting ‘mess’ it was scooped up and put into individual bowls. It became popular at Eton and was sold in the school tuck shop in the 1930s.

Equipment

  • 2 Baking sheets
  • Baking papere
  • 2 Large mixing bowls
  • Electric hand whisk or Stand Mixer
  • Small bowl
  • Medium bowl
  • Cling film

Preparation method

  • Preheat the oven to 130C/260F/gas ¾.
  • Line the baking sheets with baking paper.
  • Place the egg whites into a large mixing bowl and whisk to soft peaks. Add the sugar a large spoon at a time, whisking as you add it. Continue whisking to a stiff and glossy consistency.
  • Place large spoonsful of meringue on the lined baking sheets, well-spaced out.
  • Place in the oven and bake for 2 ½ hours until crisp. Turn the oven off and leave the meringues inside to cool completely and dry out.
  • Wash and hull the strawberries and cut three quarters of them into bite size pieces. Slice the remaining strawberries fairly thinly and place in the small bowl.
  • Place the chopped strawberries in the medium bowl, sprinkle with the caster sugar and stir. Cover with cling film and leave to macerate for half an hour.
  • Place the double cream and icing sugar in a large mixing bowl and beat with the electric hand whisk to until just starting to thicken.
  • Break up the meringues and fold into the whipped cream.
  • Add the macerated strawberries into the cream and fold in very gently.
  • Spoon the ‘Mess’ into a serving dish, or divide between six individual dishes, and top with the thinly sliced strawberries.
