Boxty

The word boxty is assumed to derive from the Irish arán bocht ti (poor house bread). It is a potato pancake and is traditionally served on St Brigid’s day as she is the patron saint of dairies. However, it is likely that the making of pancakes is related to other culinary traditions of early spring (Pancake Day in England and Candlemas Day in France and Belgium) and follows the custom of using up the dairy products that are forbidden during Lent.

Equipment

  • Weighing scales
  • Measuring jug
  • Large saucepan
  • Colander
  • Potato ricer or masher
  • Grater
  • Large mixing bowl
  • Large frying pan

Preparation method

  • First you will need to make the mashed potato. Ideally you should make this in advance, as it has to be at room temperature when you make the boxties.
  • Place the potatoes in the saucepan and cover with cold water.
  • Bring to the boil and simmer until cooked through.
  • Drain in the colander and spoon the potatoes into the potato ricer and squeeze into the saucepan.
  • Once all the potatoes have been ‘riced’ add a knob of butter and a little milk and stir thoroughly.
  • Alternatively drain the potatoes, return to the saucepan, add a knob of butter and a little milk and mash until smooth. Set aside.
  • When the mashed potato has completely cooled, grate the raw potatoes and add them to the mixing bowl along with the rest of the ingredients apart from the milk and butter.
  • Slowly add in the milk until a spoonable batter is formed.
  • Add the butter and stir in.
  • Heat the oil in the frying pan or griddle.
  • Add a heaped tablespoon of batter to the pan and flatten to form the pancakes.
  • Cook for 3-4 minutes and then flip and cook the second side for 2-3 minutes.

  • 200 g plain flour
  • 1 tsp baking powder
  • 1 tbsp melted butter
  • 100 ml whole milk
  • Oil for frying
