Beef a la Mode

Beef a la Mode (rich spiced beef stew) in blue and white serving dish. Serving of stew on blue edged plate with mashed potato and cabbage. Silver cutlery. Napkin. Glass of red wine. White tablecloth.

This recipe suggests the increasing influence of French cuisine during the seventeenth century. It differs from standard French recipes involving beef cooked in red wine with its inclusion of spices, particularly liked by the British. This recipe is based on Hannah Wooley’s in The Cook’s Guide (1664).

Equipment

Preparation method

  • Preheat the oven to 160C/315F/gas 2 ½.
  • Heat the dripping in the frying pan until sizzling hot.
  • Add half the meat and brown thoroughly on all sides.  This needs to be done in batches as an overfilled frying pan will result in the meat being steamed rather than fried.  Remove to the shallow dish and set aside while you brown the remaining meat in more melted lard.  
  • Add the oil to the casserole, heat and sauté the lardons and onions on a moderate heat until the lardons have browned and the onion is translucent and beginning to take on colour.  
  • Add the beef and spices and stir thoroughly.
  • Add the wine and stock and bring up to the boil.
  • Immediately take off the heat, cover the casserole and place in the oven for two and a half hours or until the meat is tender and the sauce reduced.
  • Remove from the oven, shake in the flour and stir in.
  • Cook on the hob until the gravy has thickened slightly. Season to taste.
  • Best served with mashed celeriac and potato and greens.

Tip: After you have peeled onions or shallots, cut them in half and remove the inner shoots as they can cause indigestion.

  • 1 tbsp beef dripping
  • 500 g stewing steak, cut into bite size chunks
  • 1 tbsp oil
  • 100 g smoked lardons
  • 2 onions, peeled and chopped
  • 6 cloves
  • 3 blades of mace or 1 tsp ground mace
  • 2 tsp cinnamon
  • Salt and pepper
  • 300 ml red wine
  • 200 ml beef stock
  • Salt and freshly ground black pepper
