Dating from the end of the eighteenth century when the Welsh, like the English, began to eat potatoes rather than feed them to their livestock, this potato stew became a cheap and popular dish in poorer households.

Equipment

  • Weighing scales
  • Measuring jug
  • Shallow dish
  • Cast iron casserole

Preparation method

  • Heat a little lard in the casserole over a medium heat and fry off the bacon for about five minutes.
  • Remove from the pan and transfer to the shallow dish.
  • Add the onions to the remaining bacon fat and sauté on a moderate heat until starting to colour.
  • Remove from the heat.
  • Place a layer of potatoes in the bottom of the casserole and top with the onions, bacon and carrots.
  • Place the remaining potatoes on top and pour over the stock.
  • Return to the hob and bring to the boil, then cover and simmer for about 30 minutes or until the potatoes and carrots are cooked, stirring occasionally to prevent the potatoes sticking.
  • Serve immediately in the casserole or transfer to a serving dish or bowl.

Tip: After you have peeled onions or shallots, cut them in half and remove the inner shoots as they can cause indigestion.

  • Lard
  • 10 rashers of smoked streaky bacon, cut into pieces
  • 3 small onions, sliced
  • 2 large carrots, chopped
  • 800 g potatoes, peeled and sliced to 4mm thick
  • 400 ml chicken stock
  • ½ tsp ground black pepper
